Low Cholesterol Apple And Oat Bran Muffins - cooking recipe

1/4 tsp. baking soda
1 1/4 c. whole wheat flour
1 c. oat bran
1/3 c. brown sugar
2 1/2 tsp. baking powder
1/4 tsp. nutmeg
1/4 tsp. cinnamon
1 c. buttermilk
2 egg whites
2 Tbsp. oil
3/4 c. shredded and peeled apple
nonstick coating
Preparation

In a medium bowl, stir together flour, oat bran, brown sugar, baking powder, baking soda, salt, nutmeg and cinnamon.
Set aside. In a small bowl, combine buttermilk, egg whites and oil.
Add to dry ingredients; stir just until moist.
Stir in apple.
Store batter tightly covered in refrigerator for 5 days.
To bake, spray muffin cups with nonstick spray coating.
Spoon about 1/4 cup batter into each muffin cup.
Bake 375\u00b0 for 18 to 20 minutes or until toothpick comes out clean.
Make 12 muffins. 124 calories per muffin.
