Confetti Shrimp - cooking recipe

Ingredients
    1 lb. jumbo shrimp
    4 eggs
    1/2 c. cream
    flour as needed
    salt and white pepper to taste
    1 pkg. shredded coconut
Preparation
    Peel and devein shrimp; lightly dust with flour.
    Combine eggs, cream, salt and pepper; dip shrimp into mixture, then roll in coconut.
    Deep fry in hot oil (375\u00b0) about 3 minutes.
    Serve immediately with apricot or plum sauce.
