Carrot Pennies - cooking recipe

Ingredients
    2 lb. carrots (about 12 medium)
    1 medium onion, chopped
    1 or 2 green peppers, chopped fine
    1 can tomato soup
    1/2 c. oil
    3/4 c. vinegar
    3/4 c. sugar
    salt and pepper
Preparation
    Slice and cook carrots until tender.
    Combine oil, vinegar, sugar and soup.
    Bring to a boil.
    Pour over carrots, onion and peppers.
    Best if marinates overnight.
    Will keep for several days.
