Lemon Chicken And Rice - cooking recipe

Ingredients
    1 lb. cooked chicken, cut into strips
    1 medium onion, diced
    2 Tbsp. margarine
    1 can chicken broth
    1 1/2 c. Minute rice
    1 large carrot, sliced
    1/2 tsp. salt
    1 c. snow pea pods
    3 Tbsp. parsley
    1 Tbsp. cornstarch
    2 Tbsp. lemon juice
Preparation
    Saute chicken and onion in butter until chicken is lightly browned, about 5 minutes.
    Stir in cornstarch, cook 1 minute.
    Add broth, carrots, lemon juice and salt; bring to a full boil.
    Stir in pea pods, parsley and rice.
    Cover and let stand 5 minutes. Fluff with fork.
    Cooking time: 25 minutes.
    Yields 4 servings.
