Tortilla Soup - cooking recipe

Ingredients
    1 small onion, chopped
    2 cloves garlic, pressed
    2 Tbsp. vegetable oil
    1 c. tomatoes, peeled and chopped
    3 c. chicken stock
    1 1/2 c. tomato juice
    1 c. water
    1 tsp. chili powder
    1 tsp. cumin
    salt to taste
    4 corn tortillas, cut into 1-inch pieces
    1/2 c. grated Cheddar cheese
Preparation
    In a 3 or 4-quart pan, saute onions and garlic in oil until the onions are translucent.
    Add tomatoes, chicken stock, tomato juice and water.
    Season with chili powder, cumin and salt to taste. Cover and simmer 45 to 60 minutes.
    Just before serving, bring liquid to a boil.
    Add tortillas and cheese.
    Cover, remove from heat and let sit 3 to 5 minutes.
    Serve immediately.
    Yield:
    6 servings.
