Catfish Gumbo - cooking recipe

Ingredients
    1 catfish (about 5 lb.), cut into 1 x 2-inch strips
    2 Tbsp. prepared chopped garlic
    2 tomatoes, chopped
    1 medium onion, chopped
    2 to 3 (12 oz.) jars salsa
    1/2 tsp. cayenne pepper
Preparation
    In an 8-inch cast-iron skillet, brown chopped onion.
    Add tomatoes and cook 5 minutes.
    Add all other ingredients except catfish and cook approximately 5 more minutes, reducing liquid by half.
    Reduce heat to simmer and add catfish.
    Cook for 8 minutes. Serve over rice.
