Barbecued Pork Chops And Rice - cooking recipe

Ingredients
    1/3 c. chopped onion
    1/3 c. chopped celery
    1/3 c. chopped green pepper
    1 1/2 c. quick cooking rice (uncooked)
    1 envelope instant tomato soup mix
    1 (16 oz.) can tomatoes
    1 1/2 tsp. salt
    1/2 tsp. pepper
    6 loin pork chops
    1 1/2 tsp. barbecue seasoning spice
Preparation
    Combine onion, celery and green pepper in a 3-quart casserole. Cover with wax paper.
    Microwave at High 2 minutes.
    Add rice, soup mix, tomatoes, salt and pepper; stir well.
    Spread evenly in casserole with onion mixture.
    Sprinkle each pork chop with barbecue seasoning spice.
    Place on top of rice-tomato mixture. Cover with plastic wrap; microwave at High 5 minutes.
    Rotate dish 1/4 turn.
    Microwave at Medium 15 to 20 minutes.
    Let stand, covered, 3 to 5 minutes before serving.
    Makes 6 servings.
