Easy Green Onion-Potato Soup(For A Light Supper, Serve With Crusty Bread And A Green Salad.) - cooking recipe

Ingredients
    1 c. sliced green onions with tops
    1 medium garlic clove, crushed (optional)
    1 Tbsp. oil
    4 c. chicken broth
    1 c. milk or half and half
    1 pkg. (4 serving size) instant mashed potatoes
    1 medium carrot, shredded coarse
    fresh ground pepper to taste
    minced green parsley (optional)
Preparation
    In medium saucepan over medium heat, saute onions and garlic in oil, stirring occasionally, for 5 minutes or until onions are wilted.
    Add broth; bring to rolling boil.
    Remove from heat; stir in milk, potatoes and carrot.
    Cook until just thoroughly heated.
    Season with pepper, sprinkle with parsley.
    Makes 4 servings.
