Banana Nut Bread - cooking recipe
Ingredients

2 eggs
1 1/2 c. sugar
1/2 c. oil
1 c. chopped pecans
1 c. mashed bananas
2 c. flour
1/4 c. buttermilk
1 tsp. soda, dissolved in buttermilk
1/4 tsp. salt
1 tsp. vanilla
3/4 c. coconut flakes (optional)
Preparation

Cream together sugar and oil.
Add eggs and mix well.
Add vanilla, chopped nuts and bananas.
Add buttermilk and soda mixture.
Blend in salt and flour.
Add coconut flakes if desired. Bake in greased and floured tube pan, 9 x 12-inch pan or muffin pan at 325\u00b0 until lightly brown.
