Diabetic Cake - cooking recipe

Ingredients
    2 c. raisins
    2 c. flour
    1 tsp. soda
    1/2 tsp. salt (omit if using self-rising flour)
    1 1/4 tsp. cinnamon
    1/2 tsp. nutmeg
    3/4 c. oil
    1 c. unsweetened applesauce or fruit cocktail
    2 Tbsp. liquid sweetener
    1 tsp. vanilla
Preparation
    Cook raisins in 2 cups water.
    Drain and reserve liquid. Blend next 5 ingredients.
    Stir into raisins.
    Add remaining ingredients including raisin liquid.
    Mix well and pour into a 9 x 9-inch pan or Bundt pan.
    Bake at 350\u00b0 until toothpick comes out clean when inserted in top.
    Makes 18 servings.
    Each 1 bread, 1 fruit plus 2 fat exchanges.
