Orange Roughy Italiano - cooking recipe

Ingredients
    3 Tbsp. olive oil
    1/2 c. sliced onion
    2 c. thinly sliced zucchini
    1 tsp. dried oregano
    1 tomato, chopped
    1 lb. orange roughy, cut in serving size pieces
    salt and pepper to taste
    1/2 c. grated Provolone cheese
Preparation
    Heat oil in a large skillet.
    Add onion, zucchini and oregano. Saute over medium-high heat, stirring often, for about 4 minutes. Place tomato and fish over vegetables in skillet.
    Sprinkle fish with salt and pepper. Cover skillet, reduce heat and simmer until fish is opaque and flakes easily with a fork, about 1 1/2 minutes. Serve immediately. Top with grated cheese just before serving. Serves 4.
