Broccoli-Red Pepper Salad(Christmas) - cooking recipe

Ingredients
    2 medium bunches broccoli (about 2 lb.)
    3 red bell peppers, diced (3 c.; may substitute cherry tomatoes)
    3/4 c. oil
    3 Tbsp. white wine tarragon vinegar
    2 tsp. Dijon mustard
    salt and pepper to taste
    fresh parsley, chopped
Preparation
    Peel broccoli stalks, cut into 1/4-inch size pieces.
    Cook stalks in boiling water 1 minute.
    Add flowerets, cook 1 to 3 minutes until crisp-tender.
    Rinse in ice cold water and drain. Mix last 5 ingredients.
    Toss with peppers.
    Serve cold.
    Serves 12.
