Ingredients

2 fresh coconuts
4 c. all-purpose flour
2 2/3 c. sugar
5 1/2 tsp. baking powder
2 tsp. salt
6 egg whites
2 c. heavy cream
3 tsp. vanilla
Preparation

Reserve coconut milk and grate coconuts.
Sift flour, sugar, baking powder and 1 1/2 teaspoons salt.
Repeat sifting.
Beat egg whites with remaining salt until stiff peaks form.
Whip the cream until stiff and fold lightly into egg whites with wire whisk.
