New York Brass Rail Cheesecake - cooking recipe

Ingredients
    3 lb. cream cheese, softened and cut up
    1 1/2 c. sugar
    3 large eggs
    1 1/2 tsp. vanilla
    1 c. half and half (I often use whipping cream)
    grated rind of 1 lemon
Preparation
    Blend well in large mixer bowl.
    Butter a deep 10-inch spring-form pan.
    Line the bottom with crushed lemon cookies. Pour batter into pan.
    Place cake pan into a larger pan of hot water, half the depth of the cake pan.
    Bake at 450\u00b0 for 15 minutes, then at 350\u00b0 for 80 minutes or until completely set.
    Let cool thoroughly before removing from spring-form pan.
