Sausage Jambalaya - cooking recipe
Ingredients

3/4 lb. smoked and hot sausage mixed, thinly sliced
1 small eggplant (about 1 lb.)
1/2 c. chopped green peppers
2/3 c. uncooked rice
1 c. chicken broth
1 c. drained canned tomatoes, chopped or fresh
1/4 tsp. garlic powder
1/2 tsp. salt
black pepper
1 small bay leaf
1/2 c. chopped onions
Preparation

In an ovenproof skillet, cook sausage until lightly browned. Add eggplant, onions and green peppers.
Cook until tender-crisp. Stir in rice, broth, tomatoes and seasonings. Bring to a boil. Cover and bake at 350\u00b0 for 30 minutes or until rice is tender and liquid is absorbed.
Fluff lightly with a fork.
Remove bay leaf.
