Ingredients

1 fresh coconut, grated
1 can evaporated milk
1/2 can water
1 c. sugar
4 egg yolks (keep whites)
2 tsp. cornstarch
1 pie shell, cooked
Preparation

Separate eggs; reserve about 1/4 cup coconut.
Whip egg whites.
Combine all other ingredients; cook over low heat until thickened; pour into pie shell.
Top with egg whites; sprinkle with 1/4 cup coconut.
Brown on broil for about 2 minutes.
