2 lb. baking potatoes, scrubbed
1 tsp. olive or vegetable oil
1 large garlic clove, minced
1 tsp. salt
1/4 tsp. black pepper
Preparation

Preheat the oven to 450\u00b0.
Line jelly roll pan with foil. Spray with vegetable cooking spray. Cut potatoes into 1/2-inch wide slices.
Toss potatoes with oil, garlic, salt and pepper to coat well. Bake 40 to 45 minutes, tossing once or twice, until potatoes are crisp and golden.
Makes 4 servings.
