Veal Marsala Scallopini - cooking recipe

Ingredients
    1 lb. thin veal cutlets
    1/3 c. grated Parmesan cheese
    1 clove garlic
    1/4 c. butter
    4 or 5 mushrooms, thinly sliced
    dash of cayenne pepper
    1/4 c. chicken broth
    1/4 c. Marsala wine
Preparation
    Flatten veal and coat with cheese.
    Saute meat and garlic in butter until golden brown.
    Add butter as needed.
    Remove meat and garlic; set aside.
    In same butter, saute mushrooms and set aside on top of veal.
    To the butter, add pepper, broth and wine; stir until all brown.
    Add veal and mushrooms to pan; cook 1 minute over high heat.
    Serve at once.
    Serves 4.
