Black Bean And Rice Salad(Cursillo Recipe - Serves 60) - cooking recipe

Ingredients
    24 c. cooked rice, cold
    120 oz. canned pinto beans
    120 oz. canned black beans
    80 oz. frozen peas
    10 c. sliced celery
    8 red onions, chopped
    30 oz. canned Ortega chilies
    2 c. cilantro, chopped
    2 c. olive oil
    4 c. white wine
    1 c. water
    salt & pepper to taste
    8 cloves of garlic, minced
Preparation
    Mix together through cilantro.
    The remaining ingredients make up the dressing. Mix dressing together then pour over rice and bean mixture.
    Be careful not to break down rice.
    Mix well. Serve cold.
