Eggplant Casserole - cooking recipe

Ingredients
    eggplant
    egg
    1 Tbsp. butter
    crushed crackers
    milk
    1 c. grated cheese
    salt and pepper
Preparation
    Cook eggplant until tender in salted water. Drain real good and dump in bowl. Salt and pepper. Beat egg and put in 1 tablespoon butter, crushed crackers, milk and 1 cup grated cheese. Mix all together. Not real soupy, but like a cake batter. Bake at 350\u00b0 until it bubbles (30 minutes to 1 hour).
