Creole Chicken Gumbo - cooking recipe

Ingredients
    1 c. cut celery and leaves
    1 large onion, chopped
    2 Tbsp. flour
    1/4 c. vegetable oil
    2 c. chicken broth
    1 (16 oz.) can tomatoes (undrained)
    1 green pepper, chopped
    1 bay leaf
    1/4 tsp. thyme
    2 c. sliced okra
    2 Tbsp. chopped parsley
    salt to taste
    1/4 tsp. Tabasco
    2 c. cooked chicken
    1 bag frozen shrimp, cooked
Preparation
    Cook celery, onion and flour in oil 5 minutes, stirring as needed.
    Add broth, tomatoes, green pepper, bay leaf, thyme, okra, parsley, salt and Tabasco; stir well.
    Cook 1 hour, stirring occasionally.
    Add chicken and shrimp.
    Heat through.
    Serve over rice.
    Add Tabasco to taste.
