Brookville Hotel'S Sweet-Sour Coleslaw - cooking recipe

Ingredients
    1 medium head young cabbage
    1 tsp. salt
    1 c. whipping cream
    2/3 c. sugar
    1/3 c. vinegar
Preparation
    Discard outer leaves of cabbage.
    Shred the cabbage; sprinkle with salt.
    Cover and refrigerate for several hours (or days). Thirty minutes before serving, combine the remaining ingredients and beat until cream holds a soft peak.
    Do not overbeat.
    Gently fold cream dressing into shredded cabbage.
    Chill.
    Serves 6 to 8.
