Eggplant And Shrimp Casserole - cooking recipe
Ingredients

2 large eggplant
1 large onion, chopped
1 large bell pepper
3 cloves garlic
1 1/2 lb. peeled shrimp
1 oz. can crab meat
2 eggs
4 slices bread
milk
1 tsp. salt
1/2 tsp. cayenne pepper
2/3 bottle olive oil
Preparation
-
Soak bread in milk until soft enough to make mush.
Add eggs and eggplant; mix well.
Saute onions, bell pepper and garlic in olive oil until clear.
Add shrimp and crab meat; stir until shrimp are pink.
Mix with eggplant mixture.
Add salt and pepper.
Pour into casserole dish and bake 45 minutes at 400\u00b0.
