Cucumber Soup - cooking recipe
Ingredients

2 Tbsp. margarine
1/4 c. chopped onion
2 c. diced unpeeled cucumbers
1/2 c. diced raw potatoes
2 c. chicken broth or 1 c. milk and 1 c. water
1 c. watercress leaves
2 sprigs parsley
1/2 tsp. salt
1/4 tsp. dry mustard
Preparation
-
Simmer above 15 minutes or until potatoes are tender.
Cool. Puree in electric blender.
Correct seasoning.
Can be served cold or hot.
