South Coast Hominy - cooking recipe

Ingredients
    3 Tbsp. butter
    1/2 c. green pepper, chopped
    1 tsp. salt
    dash of cayenne pepper
    1 c. Cheddar cheese, grated
    1 (1 lb. 13 oz.) can hominy, drained
    1/2 c. buttered bread crumbs
    1/4 c. mild canned green chili peppers (optional)
    1 small onion, minced
    3 Tbsp. flour
    1/2 tsp. dry mustard
    1 1/2 c. milk
    1/2 c. ripe olives, chopped
Preparation
    Melt butter in saucepan; add onion and green pepper and saute for 5 minutes.
    Blend in flour and seasonings.
    Add milk and cook, stirring, until mixture thickens and comes to a boil.
    Add grated cheese and stir until melted.
    Remove from heat; add olives and hominy.
    Pour into a 1 1/2-quart casserole dish; sprinkle with buttered bread crumbs and bake at 375\u00b0 for 30 minutes or until crumbs are brown.
    Serves 4 to 6.
