Salmon Croquettes - cooking recipe

Ingredients
    3 (7 1/2 oz.) cans salmon
    1/2 large sweet potato, grated (approximately 1 c.)
    1 large onion, grated
    1/2 c. plus 1 Tbsp. matzo meal
    3 eggs, beaten
    1/8 tsp. onion powder
    1/8 tsp. ground pepper
    1 generous pinch salt
    vegetable oil (for frying)
Preparation
    In large bowl, place salmon, drained.
    Remove bones and mash with fingers.
    Add next 7 ingredients and mix.
    In large frying pan, heat oil.
    Shape mixture into the size of small hamburgers and fry until brown on both sides.
    Remove from pan and drain on paper towels.
    Serve warm or at room temperature.
    Cooking time: Under 1 hour.
    Makes 12 patties.
