Chicken With Capers - cooking recipe

Ingredients
    6 chicken cutlets, skinless, flattened
    8 Tbsp. flour
    paprika, salt and pepper to taste
    2 1/2 Tbsp. butter
    1/2 c. olive oil or to taste
    juice of 1 lemon
    2 oz. capers
Preparation
    In a shallow bowl, combine flour, paprika, salt and pepper. Dip cutlets in flour mixture.
    Saute chicken in butter and olive oil on medium-high heat until golden brown.
    Remove cutlets. Discard oil mixture.
    Add lemon juice and capers.
    Return cutlets to pan.
    Saute over low heat for about 5 minutes.
    Serve over rice.
    Makes 6 servings.
