Rice Au Gratin Supreme - cooking recipe

4 c. cooked rice
1/2 c. chopped onion
1/2 c. chopped green pepper
2 oz. chopped pimento, drained
1 (10 1/4 oz.) can cream of mushroom soup (undiluted)
1/3 c. mayonnaise
2 c. (8 oz.) shredded Cheddar cheese, divided
1/2 c. milk
Preparation

Combine first four ingredients in a large bowl; mix well. Combine soup, mayonnaise, 1 cup cheese and milk.
Stir into rice mixture.
Spoon mixture into lightly greased, 2-quart casserole. Bake at 350\u00b0 for 25 minutes.
Sprinkle with remaining 1 cup of cheese and bake 5 more minutes.
Makes 8 servings.
