Caribbean Banana Chicken - cooking recipe

Ingredients
    6 skinned and boned chicken breasts (halved)
    6 thin slices lean ham
    1 ripe banana
    1 Tbsp. flour
    1 beaten egg or 2 egg whites (or 1/4 c. egg substitute)
    grated coconut
Preparation
    Flatten chicken, arrange ham slice on top.
    Peel banana and cut into thirds crosswise and cut each third in half.
    Place 1 banana piece on top of ham slice.
    Roll chicken-ham-banana like an eggroll, enclosing banana and ham inside.
