Zucchini With Cheese And Eggs(A Family Favorite) - cooking recipe

Ingredients
    4 to 6 small zucchini, cut in small pieces (about 5 to 6 c.)
    4 well beaten eggs
    1/2 c. grated cheese
    1/4 c. olive or canola oil
    1/4 c. chives or onion
    chopped parsley
Preparation
    Heat oil and add chives or onion; saute until golden.
    Add sliced zucchini, turning frequently until tender.
    Add herbs to well beaten eggs and pour over zucchini.
    Cook very slowly over medium heat without stirring eggs until set.
    Sprinkle with cheese and slip under broiler to brown cheese lightly.
    Cut in wedges and serve very hot.
    (Chopped ham/bacon can be added to eggs.)
