Cracked Wheat Salad * - cooking recipe

Ingredients
    4 c. water
    2 c. bulgur
    1 c. chopped pecans
    1 c. dried currants
    4 Tbsp. chopped parsley
    1 Tbsp. olive oil
    grated zest of 1 orange
    1 can mandarin oranges or 1 orange, cut up
    salt and pepper to taste
    orange juice (add to taste)
Preparation
    In large saucepan, combine water and bulgur.
    Bring to a boil; reduce heat and simmer, covered, 20 minutes or until water is absorbed and wheat is tender, but not mushy.
    Transfer to a bowl and refrigerate, uncovered, until cool.
    Add pecans, currants, parsley, olive oil, orange zest, can of mandarin oranges (or orange, cut up), salt and pepper to taste and orange juice to taste.
    Serves approximately 12 side dishes.
