Shrimp Creole - cooking recipe
Ingredients

2 lb. medium shrimp
2 1/2 c. shrimp or clam stock
1/2 c. chicken fat or peanut oil
2 1/2 c. chopped onion
1 3/4 c. chopped green pepper
4 Tbsp. butter
2 Tbsp. garlic, minced
1 bay leaf
2 tsp. salt
1 1/2 c. celery
1 1/2 tsp. white pepper
1 tsp. red pepper
3/4 tsp. black pepper
1 1/2 tsp. hot sauce
1 Tbsp. thyme
1 1/2 tsp. basil
2 c. fresh tomatoes
1 1/2 c. tomato sauce
2 tsp. sugar
Preparation

Heat fat; add onions.
Stir.
Lower heat until onions are brown.
Add remaining onions and celery.
Add pepper and butter. Cook 5 minutes.
Add hot sauce, thyme, basil and 1/2 cup stock. Cover.
Cook over medium heat 5 minutes.
Add tomatoes; stir. Lower heat.
Simmer 10 minutes.
Stir in tomato sauce; simmer 5 minutes.
Add remaining stock and sugar; stir.
Simmer 15 minutes. Add shrimp.
Turn off heat.
Let stand 15 minutes.
Serve.
