Banana-Chocolate Chip Muffins - cooking recipe
Ingredients

1/4 c. canola oil
2 Tbsp. honey
2 eggs
3 very ripe bananas, mashed
1 1/2 c. unbleached white flour
1 tsp. baking soda
1/4 tsp. salt
1/2 c. old-fashioned oats (uncooked)
1 c. mini chocolate chips
nonstick cooking spray
Preparation

Preheat oven to 350\u00b0.
Combine oil, honey and eggs.
Beat in bananas; set aside.
In small bowl, mix flour, baking soda and salt.
Add oats.
Stir in chocolate chips.
Add to banana mixture, stirring just until moistened.
Line muffin cups with paper baking cups or spray with nonstick spray.
Fill 2/3 full.
Bake for 20 to 25 minutes or until golden brown.
Makes 18 muffins.
