Sweet Potato Pudding - cooking recipe

Ingredients
    3 eggs, separated
    1/2 c. sugar
    1/4 c. orange juice
    1/2 c. butter, melted
    1/4 tsp. salt
    1 1/2 tsp. grated lemon rind
    1/4 tsp. dried tarragon
    2 c. shredded, pared, raw sweet potatoes
Preparation
    Beat together egg yolks and sugar until light and fluffy. Gradually beat in orange juice and melted butter.
    Stir in salt, lemon rind, tarragon and sweet potatoes.
    Beat egg whites until stiff but not dry; fold into sweet potato mixture.
    Turn into buttered 1 quart casserole and bake at 350\u00b0 for 25 to 30 minutes, until set and lightly brown.
    Serves 6 to 8.
