Cheesy Shrimp And Grits Casserole - cooking recipe

Ingredients
    4 cups chicken broth
    1/2 tsp. salt
    1 cup regular grits
    1 cup shredded cheddar, sharp
    1 cup Monterey Jack with peppers
    2 Tbsp. butter or margarine
    6 green onions, chopped
    1 green pepper, chopped
    1 clove garlic, minced
    1 pound fresh shrimp, peeled and cooked
    1 can diced tomatoes and green chilies, drained
    1/4 tsp. salt
    1/4 tsp. pepper
Preparation
    Bring broth and 1/2 tsp. salt to a boil in a large saucepan and stir in grits.
    Cover and reduce heat and simmer for 20 minutes.
    Stir together grits, 3/4 cup cheddar and all of Monterey Jack cheese.
    Melt butter in a large skillet and add green peppers, onion and garlic and saute for 5 minutes.
    Stir together onion mixture, grits mixture, shrimp and next three ingredients. Pour into a lightly greased 2 quart baking dish and sprinkle with remaining cheddar.
    Bake at 350 degrees for 30 -45 minutes.
