Pralines - cooking recipe

Ingredients
    1 c. buttermilk
    1 tsp. baking soda
    3 c. sugar
    1 c. butter, melted
    2 tsp. light corn syrup
    pinch of salt
    1 tsp. vanilla extract
    3 c. broken pecans
Preparation
    Combine buttermilk and baking soda in a 5 qt. saucepan, stirring until soda is dissolved; add sugar, butter, corn syrup, and salt.
    Bring mixture to a boil; cook, stirring constantly until mixture reaches soft ball stage (236\u00b0).
    Remove from heat, and let stand until lukewarm (110\u00b0).
    Add vanilla and pecans to candy; beat until mixture begins to thicken and loses its gloss. Drop by Tbsp. onto a lightly buttered baking sheet or waxed paper; let stand until firm.
    Store in airtight container.
