Aunt Laura'S Zucchini Pickles - cooking recipe

Ingredients
    1 gal. peeled zucchini, cut in 3 x 1-inch cubes
    2 gal. cold water
    2 c. dehydrated lime
    1 qt. cider vinegar
    9 c. sugar
    1 tsp. whole pickling spice
    1 tsp. mustard seed
    3 tsp. salt
    few whole cloves (for color/flavor)
Preparation
    Soak zucchini in 2 gallons cold water and lime.
    Drain and wash at least 6 to 7 times to remove all trace of lime.
    This is important.
    Let sit in cold water 3 hours, then drain.
    Mix sugar, spices and 1 quart cider vinegar to zucchini.
    This will be watery on top and not mix well.
    Let stand overnight.
    Simmer 30 minutes and seal in sterilized jars.
