Freezer Cucumber Chips(Pickles) - cooking recipe
Ingredients

4 c. thinly sliced unpeeled cucumbers
2 c. thinly sliced onions
1 Tbsp. salt
1 c. water
1 small hot chili pepper (optional)
1 c. sugar
1/2 c. cider vinegar
Preparation

In large bowl, combine cucumbers, onions, salt and water.
Let stand 2 hours.
Drain liquid and squeeze the vegetables by handfuls to extract more moisture.
Add remaining ingredients and stir until sugar is dissolved.
Spoon into freezer containers.
Cover tightly. Freeze at least overnight before serving.
Thaw 4 hours and serve. Makes 3 pints.
