Pineapple Upside-Down Cake - cooking recipe

1 (17 oz.) can sliced pineapple
6 Tbsp. butter
1 c. brown sugar
2/3 c. shortening
1 c. sugar
2 eggs
2 tsp. vanilla
2 c. flour
2 1/2 tsp. baking powder
1/2 tsp. salt
Preparation

Drain pineapple; save juice.
Melt butter in pan (iron skillet).
Add brown sugar and 1 tablespoon of juice.
Add syrup to water to make 1/2 cup; set aside.
Arrange pineapple in bottom of pan.
Cream together the shortening and sugar until light and fluffy.
Add eggs and vanilla.
Beat until fluffy.
Sift together the flour, baking powder and salt.
Add to creamed mixture alternately with the 1/2 cup reserved pineapple juice, beating after each addition.
Spread over pineapple.
Bake at 350\u00b0 for 40 to 45 minutes.
Cool 5 minutes.
Invert plate.
Serve warm.
