Savory Rice Pilaf - cooking recipe

Ingredients
    2 c. long grain white rice
    1 Tbsp. olive oil
    4 c. stock
    1/2 c. apple juice
    1 large onion, diced
    2 cloves garlic, diced
    2 tsp. lemon juice
    1/2 tsp. dried thyme
Preparation
    In 2-quart pan, combine the rice and oil.
    Stir over medium heat until rice is golden brown (5 minutes).
    Add stock, apple juice, onion, garlic, lemon juice and thyme.
    Reduce heat to low; cover pan and simmer until all liquid has been absorbed and rice is tender, about 20 minutes.
    Fluff with fork before serving. Serves 6.
