Sugar-Free Rice Pudding - cooking recipe

Ingredients
    1 qt. low-fat milk
    1 c. uncooked rice
    1 tsp. vanilla
    2 Tbsp. granulated sugar replacement
    2 Tbsp. margarine
    1/2 tsp. cinnamon
    1/4 tsp. nutmeg
Preparation
    Combine all ingredients in a well-greased baking dish.
    Bake at 350\u00b0 for 2 hours or until knife inserted in center comes out clean.
    Stir occasionally the first hour.
    Or, microwave on Low for 30 to 35 minutes or until knife inserted in center comes out clean.
    Turn dish a quarter turn every 5 minutes.
    Stir occasionally the first 15 minutes.
    Serves 9.
    Diabetic exchange: 1 milk and 1/2 fruit.
