Squash Souffle - cooking recipe

Ingredients
    1 1/2 c. mashed cooked winter squash
    2 Tbsp. butter
    1 Tbsp. brown sugar
    1/4 tsp. salt
    1/4 tsp. grated orange peel
    dash of pepper
    2 egg yolks
    2 egg whites
Preparation
    In large mixing bowl, combine squash, butter, brown sugar, salt, pepper and orange peel.
    Beat until fluffy.
    Add egg yolks; beat well.
    Beat egg whites until stiff peaks form.
    Carefully fold into squash mixture.
    Bake souffle in 350\u00b0 oven for 30 minutes to 45 minutes.
    Makes 4 to 6 servings.
