Persimmon Pudding - cooking recipe

Ingredients
    1 c. persimmon pulp
    1 1/2 c. sugar
    1/2 c. melted margarine
    1 3/4 c. milk
    3 eggs
    1/2 tsp. baking powder, salt and baking soda
    1 tsp. cinnamon
    1/2 tsp. nutmeg
    1 tsp. vanilla
    2 c. plain flour
    1 c. grated sweet potato
    1 c. coconut (optional)
Preparation
    Preheat oven to 350\u00b0.
    Melt margarine in a 9 x 13-inch pan, greasing entire pan.
    Mix together all the ingredients. Pour into pan, mixing margarine into batter.
    Bake for 45 minutes until brown on top and crusty at edges.
