Yummy Eggplant - cooking recipe

Ingredients
    1 large eggplant, peeled and cubed
    1 onion, diced
    1/4 c. Parmesan cheese, grated
    1 jar spaghetti sauce
    3 eggs, slightly beaten
    oregano to taste
Preparation
    Boil eggplant, covered in water, until tender; drain and mash. Add remaining ingredients; mix well.
    Pour into greased casserole.
    Bake in preheated oven at 350\u00b0 for 45 minutes.
