Easy Lemon Pie - cooking recipe

Ingredients
    1 (3 oz.) pkg. lemon Jell-O
    2/3 c. boiling water
    2 Tbsp. lemon juice
    2 tsp. grated lemon rind (optional)
    2 c. ice cubes
    8 oz. Cool Whip
    1 graham cracker ready crust
Preparation
    Dissolve Jell-O completely in boiling water, stirring 3 minutes. Add lemon juice, lemon rind and ice cubes and stir constantly until Jell-O is thickened, 2 to 3 minutes.
    Remove any unmelted ice.
    Using wire whisk, blend in Cool Whip, then whip until smooth.
    Chill, if necessary, until mixture will mound. Spoon into pie crust.
    Chill 2 hours.
    Garnish as desired.
