Red Beans And Rice - cooking recipe

Ingredients
    1 lb. red kidney beans
    1 lb. chopped sausage
    2 cloves garlic, minced
    1 bunch chopped scallions
    1 chopped bell pepper
    1 chopped onion
    1 stalk celery, chopped
    1/4 tsp. cayenne
    1 tsp. salt
    1 tsp. oil
Preparation
    Rinse beans.
    Optionally, soak them overnight.
    Put all ingredients in a large pot and add enough water to cover twice. Bring to a boil and lower heat to simmer.
    Cover pot and cook about 3 hours until beans are soft.
    Add oil and cook another 1/2 hour.
    Serve over steamed rice with plenty of butter and French bread.
    Serves 6.
