Mexican Jubilee - cooking recipe
Ingredients

2 medium Irish potatoes
2 bell peppers
1 large onion
1 can whole tomatoes
6 small slices bacon
Preparation

Place bacon in skillet on medium heat.
Dice potatoes, green peppers and onion.
When bacon is almost brown, place potatoes, peppers and onion in pan.
When done, pour tomatoes in bowl.
Mash with potato masher, then pour in skillet with other ingredients. Simmer 10 minutes.
Eat over rice or noodles.
