German Potato Salad - cooking recipe

Ingredients
    40 lb. potatoes
    12 stalks celery, diced
    3 doz. eggs
    12 onions, diced
    4 Tbsp. parsley
    2 doz. eggs, well beaten
    12 c. sugar
    6 c. vinegar
    6 c. cold water
    1 Tbsp. dry mustard
    3 Tbsp. salt
    1 Tbsp. pepper
    3 lb. bacon
    12 Tbsp. celery seed
Preparation
    Boil potatoes in their jackets.
    Cool, peel and dice.
    Hard boil and slice 3 dozen eggs.
    Add celery, parsley, sliced eggs and onion.
    Fry bacon until crisp.
    Combine beaten eggs, sugar, mustard, salt, pepper and vinegar diluted with water.
    Mix well. Pour egg mixture into hot bacon and drippings.
    Stir until mixture thickens, about 20 minutes.
    Pour over potatoes and mix lightly. Add celery seed.
    Serve hot or cold.
    Serves about 120.
