Boilermaker Barbecue Sauce - cooking recipe
Ingredients
-
2 Tbsp. vegetable oil
1 medium onion, finely chopped
2 large garlic cloves, minced
1 (12 oz.) bottle chili sauce
3/4 c. beer
1/4 c. unsulfured (light) molasses
3 Tbsp. cider vinegar
3 Tbsp. bourbon whiskey
1 1/2 tsp. Worcestershire sauce
1/2 tsp. hot pepper sauce (such as Tabasco)
Preparation
-
Heat oil in saucepan over medium heat. Add onion and garlic; saut until tender, about 8 minutes. Reduce heat. Add chili sauce, beer, molasses, vinegar, bourbon and Worcestershire sauce. Simmer until reduced to 2 cups, stirring occasionally, about 25 minutes. Stir in hot pepper sauce. Brush on during the last 10 minutes of grilling. If making ribs, brush them often during the first part of cooking with a mixture of one part cider vinegar to 10 parts of water and a pinch of dried crushed red pepper; that will keep them moist (covers 3 pounds of meat). Can be made up to 1 month ahead. Cover; chill.
