Date Meringues - cooking recipe
Ingredients

2 egg whites
3/4 c. sugar
1 (8 oz.) pkg. pitted dates, chopped
1/2 c. flaked coconut
1/2 c. chopped pecans
Preparation

Beat egg whites (at room temperature) at high speed or an electric mixer 1 minute.
Gradually add sugar, 1 tablespoon at a time, beating until stiff peaks form and sugar dissolves (about 2 to 4 minutes).
Fold in dates, coconut and pecans.
Drop mixture by teaspoonfuls onto a lightly greased cookie sheet.
Bake at 350\u00b0 for 15 minutes.
Cool on cookie sheets.
Store in a loosely covered container.
Yield: about 3 1/2 dozen.
